Cheddar Bay Biscuit Breakfast Sliders

Depending on where you live, you may have a surplus of authentic restaurants representing various cuisines around the world. More likely you have some chain restaurants at the mall or a main street that always draw bigger crowds than the best local mom and pop restaurants in your area.


While I DO live in the former, I have lived and am acutely aware of the latter. Because I have a breadth of options where I live now when it comes to eating out, I don’t often eat at the national chains and don’t have the best opinion of many of them. One of the few I have a positive view of is Red Lobster. Generally I have received good quality food and seafood is one of the cuisines that seem taboo in general areas


This may be the mother lode of all chain restaurant doggy bags. Yes, order another basket before you are ready to finish your meal. Yes, take them home even if you have no other leftovers to speak of. NO. Do not throw them away under any circumstance. A short 10-20 second steam (cover them with a paper towel) may not restore them to 100% deliciousness, but it comes pretty damn near close.



Ingredients:

  • 3 Cheddar Bay Biscuits (also works with other leftover fast food biscuits, Popeyes > KFC)

  • 3 slices of ham or equivalent breakfast meat

  • 2-3 standard cheese slices of choice


 

Directions:

  1. The biscuits are a bit brittle when cooled, so a short 10-15 second warming in the microwave is ideal in order to slice them cleanly. Use a serrated knife to ensure a clean cut and avoid losing too much of the biscuits to crumbleage.

  2. Once sliced, place the open side of the biscuits down in at pan to toast each side a bit.

  3. One scrambled egg should be enough for three sliders. Stack a slice of ham, a third of the egg and cheese on the bottom of each biscuit, cap, and cover to steam and melt the cheese.

  4. Enjoy.



There is no limit to the possibilities and they will all certainly be delicious. Save those Cheddar Bay Biscuits and make something delicious.
